Very easy. I didn't take beefiness drippings, so used margarine, and used water and Better than Bullion for the beef broth. Takes 5 minutes, and was adept with the Beef and Roasted Ruddy Pepper Sandwiches I fabricated it for. I ended upwards with more than I needed, so I just tossed the remainder in a soup I'm putting together for the crock pot. If y'all added more than flour, this would also make some beef gravy. Cheers for the recipe!

A nice jus for any beefiness roast or beefiness sandwich.

Amazing!! My Husband could not become enough of this!!
12/24/2013
A ribeye prime rib roast will render a lot of fat out. Not wanting to use that much fatty, I lifted the meat out of pan and poured all the drippings into a tall narrow plastic cup. I was able to ladle the fat off very hands. I and then used just two tbls of the fatty (discarding rest) in a skillet and proceeded to follow this recipe. I only used one can of good beefiness goop as I had a lot of meaty drippings despite having gotten rid of all the fat (about a cup or more!). The results were magnificent and still rich and decadent despite losing all that fat. It made an aplenty amount of the nearly delicious "jus" you've ever tasted. Not a existent thick gravy, non a existent sparse pure jus either, but fantastic nonetheless.

Fabricated this for New Years Mean solar day dinner west/Chef John's Prime number Rib recipe......information technology was fantastic!!! Discussion to the wise tho....I keep a baking rock in my oven and it retained too much heat and my roast came out Medium instead of Med-Rare. Lesson learned!! Just gives me an excuse to try information technology once more tonight!! This Au Jus was delicious with the roast and I will be making it also this night ;-) Thanks Chef John!!!!
12/23/2013
A fine basic gravy, only not au jus in my stance.
01/eighteen/2013
When my six yr old finished his prim rib he picked upwards his Au Jus sauce basin and drank it, then said "mom, tin I take more than of this soup?" Everyone laughed and laughed, awesome moment. Thanks Chef John!
12/27/2013
This is succulent and uncomplicated to brand. I was cooking a nice prime rib and I hadn't any au jus packages and so I went to the cyberspace to come across what I could find. This was better than whatever bundle and it is my go to recipe now. I use the beefiness broth in the carton. What I don't use I freeze in ane cup tupperware for apply another day.
01/01/2013
We made this for roast beef sandwiches. We didn't have beef drippings so we but used the aforementioned corporeality of butter instead and it still came out great.
09/29/2014
Like shooting fish in a barrel, solid recipe. I didn't have to add many seasonings, as the meat drippings from my roast beef were very flavorful. I did deglaze with a splash of sherry before calculation beef stock, threw in a pinch of thyme, finished with a tbsp of butter. I wasn't sure if I wanted to skip the roast and merely drinkable the jus!
12/01/2014
I hate gravy. Every bit a upshot, I have never made it. Not once. Not e'er. This year, I made it. Using this recipe. It was amazing, and it couldn't accept been easier. I used GF flour instead of regular all-purpose flour, and it even so came out nifty.
12/26/2013
A true au jus does not have flour in information technology. But that being said this is wonderful for dipping sandwiches. Mad Chef John's Prime Rib and having French dip sandwiches for lunch today. I did add together a bit of herbs du provence I had fabricated for the roast. Yummie!!!!!!!
12/26/2013
Perfect accompaniment to our prime rib and Yorkshire pudding! I did apply a picayune more beefiness broth than chosen for but only because I had more people and I added a little extra beef drippings as well. No salt added either.
12/26/2012
From the mouth of my eight yr old, "This gravy is yummy gravy". I thickened it for more of a gravy than Au Jus. I also similar using Cornstarch rather than flour.
03/27/2016
Chef John, yous rock! This was easy peasy to make after roasting my prime rib, and it tasted wonderful! I similar a little zing in my au jus, so I added a nuance of Worcestershire Sauce. Otherwise, I treated this like gospel. Then delicious!
06/24/2014
Fabled....used it with Chef John's prime rib and just to die for. Got it nice and boiling hot to first the room temperature beef. Couldn't have been more perfect!
05/19/2013
I just made Chef John'due south Prime number Rib and this au jus with the drippings - excellent!!!!!
eleven/26/2013
Wonderful Recipe! One of the best prime number ribs we've ever had
12/27/2013
I prepared this recipe for our immediate family gathering for Christmas, 2013. Information technology served every bit both au jus for our prime rib and gravy for our garlic mashed potatoes. Information technology's not a thick gravy, which is fine; as far equally I know, au jus should exist on the thin side, though the flour does provide a little body, which is overnice. This ane is smoothen and easy and simply needed a little salt and pepper. It'south merely what nosotros had in heed.
01/01/2014
Succulent topping for potatoes too!
01/08/2013
I thought this was practiced. I'g non a large fan of au jus but the other people thought it was great. Tasting information technology on beef, I thought it was good. Tasting information technology alone, I idea information technology was bland merely again, I'1000 not a big fan of au jus. I merely knew I had to make it for the meal I was serving so this recipe was great for that.
01/10/2017
I omitted the flour and added a tsp of kitchen boquet for more than depth and season.
12/28/2016
I used all the drippings, which was more than than 1/4 cup, about ane i/2 cups, so that ways I need more flour and beef broth. I just eyeballed the consistency of the gravy and it was the best I've ever made. That recipe is a keeper! I didn't modify anything merely the amount. I got great compliments from my picky eater kids!
04/19/2013
Had this with Chef John's prime number rib recipe. Went together beautifully.
01/07/2015
it turned out so amazing, will do this again
07/17/2016
Have to say this is a very tasty au jus...and super like shooting fish in a barrel too. I fabricated a prime rib roast for a special dinner terminal week (my first). It turned out pretty wonderful and gave me but enough drippings to utilise in the au jus base. I made my own decked-out mashed potatoes and Parmesan asparagus ~served the prime rib with the au jus and creamy hot horseradish and dinner was a hit! I appreciate this site so much--y'all can discover find almost whatsoever recipe here and reviews/suggestions to assist you out besides! Thanks all--and specially you Chef John!!
12/25/2013
Easy and bones. I fabricated Chef John's Perfect Prime Rib, and then I had glorious beef drippings to make this sauce with. Mine didn't need whatever boosted table salt because my drippings had plenty. People wanted to drink this!
01/04/2018
This is really, really proficient. As true with and so many of his recipes, Chef John did not disappoint. I would; all the same, agree with the reviewer that noted this is more of a gravy over a true au jus. That existence said, the flavors are and so fantastic that I'm going to effort to make information technology adjacent time w/out the thickening element because it was certainly an added star to our Prime Rib dinner. (My 1, minor complaint would exist that because y'all're using the beefiness fat, it does congeal when it cools and gets a little "greasy" when heated upwards. But non a big enough complaint to deter united states of america from making this a repeat in our house!)
12/28/2017
This isn't what I think au jus is. This came out as gravy. I know how to make gravy. Misunderstood I guess.
12/24/2013
a good gravy recipe, not au jus.
04/21/2019
Has decent taste but it's not au jus. It's more of a gravy. An au jus is just juice and has no flour
12/30/2016
Piece of cake and perfect result.
12/25/2018
Very expert thin gravy, but definitely not au jus.
12/27/2016
Yes, it's non a true Au Jus of course, but everyone at the table loved it. Oh, and it tasted so good!
03/06/2017
ABSOLUTELY PERFECT! No Prevarication, this is the real deal hither! I made it EXACTLY as written, using the pan drippings from my prime number rib and information technology was PERFECTION! My ONLY affair was that I felt similar I should have used more than salt, but that's TOTALLY ON ME! :-) It is so skillful, and then easy to make, and, Once again, Oh, so proficient! I HIGHLY recommend that you lot try this recipe. As Always, Chef John NEVER disappoints ! Thanks Chef John; you've done it again
12/26/2016
Oh my gaaaah, so perfect. Followed recipe exactly, served information technology with prime number rib at Christmas.
12/25/2016
I used this recipe" what do you await? it was perfect, I have also applied this method to a Costco Prime rib, Perfect, I was nervous searing a 10 lb piece of Prime number grade standing rib roast for 50 minutes, However there is NO style Chef John is going to permit you downwards,, I might go the courage to upward it up and attempt a 15 lb next time
01/04/2017
Super simple and tasted great
01/17/2016
Quick like shooting fish in a barrel and succulent. I didnt have any fat from roast then I substituted with butter and information technology came out great.
12/26/2016
Like shooting fish in a barrel. Delish. No guesswork! Perfect with Chef John's continuing rib roast recipe.
01/04/2019
My wife loved information technology! She can exist picky, and she was astounded.
12/28/2016
I made this to get with Chef John's prime rib. It was perfect!
12/27/2012
Perfect spot on.
12/27/2012
excelent
01/05/2016
I fabricated this for New Years eve dinner and everyone loved it and idea it was even better than the all-time eating house.
12/31/2015
Disappointed! This isn't au jus, information technology's gravy. While the recipe tastes okay for gravy, I was trying to make au jus to become with our Christmas Prime Rib.
01/16/2016
Made information technology with Chef John's Perfect Prime Rib. We all loved it, it'south a keeper.
01/02/2016
Did exactly equally written. It was good but needed a little stronger flavour to compliment the prime number rib. I took the piffling bit of juice after cutting into the roast and added it to the mixture. Tasty!
12/20/2016
This was ok/so and so, this recipe is more like a thick gravy to me and not au jus. Tasty bland and so I added more than pan drippings.
02/01/2013
Information technology was just O.K. A 101 recipe for Au Jus base.
01/01/2014
I fabricated this with my Prime Rib for Christmas and to exist honest it was non good. Served it along side the Prime Rib and nobody used it. I tried it and it is just not au jus.
04/10/2019
A simple recipe which was flavorful and smoothen! The consistency was more attuned to a gravy so I needed it a bit thinner for the au jus. I took a bit of beef stock, added some organic molasses and the prepared recipe (didn't measure but needed only s small amt. and then guesstimate would be 1/2 c. stock, one T. prepared recipe and about a teaspoon of molasses. Gave great colour and still preserved the terrific flavor, yet was a thinner consistency for a French dip sandwich.
01/03/2020
I fabricated the sauce I didn't have beefiness stock and then I used chicken stock instead so it'south non as dark also added mushrooms, merely all I can say is yummy yummy and I cannot wait for dinner my husband will enjoy thank you chef John for the inspiration!
03/03/2019
I'g distressing Chef John. All your recipes have been great, but I disagree with y'all on this one. There is no flour in au jous. That would make it a gravy.
03/26/2016
This was so flavorful. The Au Jus thickened just enough that we also used it equally a gravy on our potatoes. I can't wait to eat the leftovers!
01/06/2013
This was expert. I used beef broth that my husband had made and frozen.
12/26/2014
Made this yesterday (as written) to serve with the "Foolproof Rib Roast". Would definitely omit the common salt considering rib roast rubs in general are salty. At that place was also a comment in the recipe to refer to the "footnote", but I couldn't detect it. Besides didn't care for the "cloudy" wait of the au jus--used to a clear 1. The taste over all was very good. Next time will either reduce or eliminate the flour. Overall though a very practiced recipe!!
12/05/2019
I made this more than or less every bit specified in the recipe. I used beef os stock that I made myself from bones from the butcher and a roast we had before, and then the stock was Really good. I'chiliad non certain if it was the bone stock or the recipe, but in any case it was terrific.
12/31/2019
The Au Jus was very good.
04/18/2017
Easy and delicious. I used it with leftover Brisket, anybody loved information technology.
01/06/2018
I only made the Au Jus to go with the Prime number Rib my swain made this night and it turned out perfect! Thank you Chef John!
12/26/2015
Kind of amazing... Served with prime rib on Christmas Day and everyone loved it. And it couldn't be whatever easier to set. Yum. Yum. Thank you for the recipe!
09/22/2019
I made a prime rib roast using Chef John'due south 'Method X' recipe. The blanket I used was the Garlic Prime Rib recipe from this website. This au jus was so good, yum! Information technology went perfectly with the meat. Thank you, Chef John, for another fabled recipe!
07/07/2019
I've made this recipe for years.
05/24/2017
fantabulous au jus!!!
12/26/2016
Perfect! Made this with Chef John Prime number rib today for Christmas dinner and it was a huge hitting. I served the au jus due north ramekins forth side of the prime rib. First-class!
12/29/2017
Perfection!
05/07/2015
Wasn't crazy about this. Thought information technology was very banal.
01/14/2019
All I can say is YUM!
01/22/2018
after this i think my husband was ready to marry me all over again... followed this to the T... wowwwww!!!!
12/26/2019
Very good, very basic. For people who just want the simple flavor of the beefiness without any fancy "extracurriculars". The only problem I had was that the flour and fat kind of bunched upwards into a few blobs earlier I added the broth. I was afraid that it would plow into a disastrous lumpy gravy. Maybe there wasn't quite enough fatty left in the pan? Anyway, in one case I added the broth and started whisking, the flour began to deliquesce and everything turned out ok. The gravy got very positive reviews. Phew.
12/26/2017
Used a os in iv lb roast. I did leave it melt for 5 extra minutes at 500 (25 min total) as we like our meat a little more well done. It turned out perfect, delicious! Fabricated the au jus as well. great meal!
12/25/2018
My husband, who is the chef in this household, could not stop complementing me on this jus. I've never fabricated something like this, only information technology's super like shooting fish in a barrel to practise. I used prime number rib scraps for "drippings", frying them in a cast atomic number 26 skillet since we were smoking the prime rib on the Traeger, so added some beef concentrate for a little stronger season. Delicious!
12/27/2021
Wonderful! Perfect with the prime rib!!
09/02/2021
I added red vino to bottom of pan while roasting the meat. Accept a dandy taste!
12/25/2021
This was my start always prime rib. Information technology was shockingly expensive so I did a lot of research and landed on this recipe. I am SO GLAD that I did. This was absolutely delicious. We wanted information technology more between medium rare and medium well so I added 10 minutes to my cook time earlier turning off the oven. It was more than medium well simply it was yet perfectly moist. We accept a newer oven with a fan so we did equally another commenter suggested and shut off the breaker to the oven at the terminate of our 500 degrees cook time.
12/27/2021
We loved it. Perfect pair for the prime ribs. Fabricated this for Christmas dinner, my daughter continue dipping the Yorkshire pudding in it.
04/eighteen/2022
Made every bit recommended. Very good; it a keeper!
05/10/2021
This Beef Au Jus recipe is fantastic! I used beef broth, butter, cornstarch, salt and pepper, onion and garlic powder with some low sodium soy sauce. It turned out beautifully. Thank you Chef John again!
02/14/2021
Information technology was amazing, my partner and I couldn't become enough! I used butter instead of fatty though.
eleven/27/2020
I made this jus after making Chef John'southward Perfect Prime number Rib. Information technology was amazing. The best jus of and jus in all the jus if the world. That'southward a attestation more to how flavorful the prime number rib is since the drippings came from at that place. This was awesome. I loved it. I will make this ever.
12/16/2017
I have a couple of questions. I take a convection oven. If I use that feature do I have to change anything almost Chef John's instructions? And I am having the butcher cutting the bone off and tying them back on. Volition that change anything?
12/20/2015
Used broth from slow cooked beefiness roast. Added salt, pepper and cilantro to taste, very skilful.
12/07/2015
Great uncomplicated recipe. Chef John does it over again. Picket the video.... Easier to execute the recipe if you sentry the video.
01/07/2020
Forth with the continuing rib roast this was across belief wonderful. Selfishly of me, I'm glad I didn't invite anyone to swallow with us as we were able to make two meals out of it. I followed the recipe word for word and it turned out exactly as it was meant to. It was bursting with flavor and like shooting fish in a barrel peasy to make.
12/25/2014
I baked the custard. Went exactly by the instructions. The pudding before the oven was delicious! Then I baked it. It wasn't as great after.
12/27/2014
It was astonishing!! I made an 8 lb prime number rib roast for Christmas Day. Saved the fat drippings and made this lovely Au-Jus this evening. Used it to make french dip sandwiches from the leftover roast pieces. I have saved this recipe and will use it from now on. Thanks Chef John!!
12/22/2018
I made it exactly as written and it was very good. Ii comments though. The recipe refers to a footnote which I could non discover. And then I recommend watching the video on how to make it. In the video it explains that the i/4 fat drippings is in addition to the meat juices in the pan which is non clear in the given directions or ingredients. I call back it would make quite a difference in the upshot. If you make information technology co-ordinate to the recipe every bit stated, the outcome is more gravy-like as another reviewers have stated. It was good, but not as good as it would have been had I made it according to the video.
12/29/2018
Very yummy
01/02/2015
Perfect, even subsequently I had to modify. I was out of beef broth so used ane cup of chicken broth and ane cup Merlot. The Fond, juices and fatty were plenty to requite information technology a very bulky flavor. Everyone loved it. After the beef was gone I used the leftovers to make a gravy by mixing with a bit more than roux. I use this method for all my gravies now. Super simple, super tasty.
01/08/2020
Awesome recipe. I need to say this though... since I am French Canadian :-) "au" pronounces like "oh" . ;-)
08/xviii/2018
I followed it with a 3.5lb beef tender roast and my kids, who exercise not eat any type of "gravy looking" sauce, devoured it!! I have NEVER attempted annihilation like that and if I can successfully do information technology, anyone can!! Great step past step and easy to follow directions
12/twenty/2018
As usual another winner of John'due south.
08/07/2018
I used left over salary oil instead of steak oil Yummy.
x/xi/2018
Very Good Gravy!!! Also very like shooting fish in a barrel to make and volition make this oftentimes....
02/24/2021
I didn't have beefiness drippings, only a deli bundle of thin sliced uncooked beef but I used beef broth and a seasoned flour mixture and simmered information technology, so I stuffed the beefiness in hot dog buns that I needed to utilize, covered with swiss for him and Colby + Monterrey jack cheeses for me and zapped them in the micro for a minute. Put them in a large shallow bowl for each with a white potato with garlic butter on it and so spooned the lovely Au Ju over the potatoes and dipped our cutting sandwiches in it - favorite new dish!! I virtually never swallow this many carbs in one meal but nosotros worked all twenty-four hours with no lunch and then we deserved the treat!
01/03/2021
Fabricated this pretty much as is only did add perchance a tablespoon of soy sauce. It was absolutely fantastic!
03/twenty/2021
Succulent and piece of cake!?
12/21/2020
So simple and and so delicious!
